I am completely thrilled to take part in the Aldeburgh Food and Drink Festival this year, in my beloved home county, Suffolk. Catch me on the Wild Suffolk Stage on Saturday at 10:00am running a kimchi demo. I'll be using some beautiful sea lettuce foraged from Southwold beach to make my green vegan kimchi; seaweed is a great substitute for fish sauce or shrimp paste to emulate that umami/sea flavour!
Than at 2:45pm join me on the Tiptree Stage for a talk on the wonders of fermentation... We'll explore the gut health benefits of incorporating fermented foods into a vegcentric diet, how and why fermented flavours are vegcentric cooking's closest ally (more here), as well lots of creative ideas for fermenting at home!
